Enzyme Activity Definition
One β-mannanase activity unit (U) is defined as the amount of enzyme which liberates 1µmol
reducing sugar from 5 mg/ml Locust bean gum(LBG) solution per minute at 37℃ and pH 5.5 under the conditions of the test.
